Guatemala guacamole…

When Chad and Emme came home from Guatemala this spring, Chad set out to recreate the recipe for guacamole that their hotel served. He did and his chunky guacamole has become a summer supper staple for us.  So good!

Chad’s Guacamole
5 ripe avacados, chopped
1 med red onion, chopped fine
1 lg or 2 sm tomatoes, chopped
1-2 Tablespoons chopped garlic
1 Tablespoon lemon juice
authentic tortilla chips
Stir avacados and lemon juice together, slightly mashing avacado as you do leaving most of the avacado in pieces. Stir in the onion, tomatoes, and garlic. Spread on large serving plate. Place chips into guacamole and serve. Enjoy!
