crockpot chorizo chicken stew recipe…

Those were my words yesterday
when I picked Chad up from work.

We weren’t disappointed.

Simply delish!
{crusty bread is a MUST}

I took this Rachael Ray recipe and adapted it to what I happened to have on hand, cut the cooking time by putting it in my crockpot,  and renamed it… Crockpot Chorizo Chicken Stew.

Crockpot Chorizo Chicken Stew

1-10 oz package beef chorizo (found in the grocery near the bratwurst)
1 jar salsa
1 large can diced tomatoes
1 large bell pepper
1 large onion
3 cloves or 1 heaping T crushed garlic
8 boneless, skinless chicken thighs

in large skillet, fry chorizo with onion, garlic, and pepper. Break up chorizo as it cooks. When cooked throughly and broken in small pieces, transfer to crock pot. Add salsa and tomatoes, with juice and stir. Place chicken thighs in crock pot and cook on high 4-5 hours for frozen chicken or 2 hours for thawed chicken. Serve with crusty bread to mop up all the sweet and spicy goodness!
