DIY… roasted sweet potato and maple sausage supper recipe

I love comfort food.
I love easy recipes.

Add sweet potatoes and maple sausage together
and you have one of the easiest…
yummiest comfort foods ever.

Quite honestly, the Holy Spirit teaches me how to cook. A few years ago, Chad and I worked our way out from under a huge mountain of debt. During that time, I learned to daily pray, “LORD, what are we going to eat today?” He taught me so many recipes when I mistakenly thought I was just throwing things together. This is another one of those recipes.

This recipe originated with my friend, Konda. Today, the Holy Spirit and I adapted it with the ingredients I had here in the house. The result? Gratitude and a new favorite!

Roasted Sweet Potato and Maple Sausage Supper…
(this feeds 4 comfortably…I will double this when my teens are home)

4 T olive oil, divided
2 large sweet potatoes
1 large onion
1 entire garlic bulb
3 carrots
5 medium white or yellow potatoes
7 maple breakfast sausage links (1/2 of a package from Aldi)
Mrs. Dash or other savory seasoning

Pour 2 T oil in bottom of 9 x 13″ baking dish. Dice sweet potatoes, carrots, and white potatoes. Stir together in baking dish. Cut onion into wedges and place on top. Break apart garlic bulb and peel each clove. Place garlic cloves around on top of veggies. Cut sausage links into bite size pieces and place over veggies. Drizzle remaining 2 T olive oil over meat and veggies and sprinkle with seasoning. Bake at 350* for an hour or until veggies roasted and browned.
